Bordelaise
Ingredients
3 cups prepared Instant Brown Gravy
3 cups red wine
½ tsp. whole peppercorns
1 bay leaf
½ tsp. thyme
1 Tbsp. Chopped Shallots in Oil
1 Tbsp. lemon juice
1 Tbsp. cold butter
4 oz. poached, diced bone marrow
Instructions
(yields approximately 1 quart)Sauté the Chopped Shallots in Oil, thyme, bay leaf, peppercorns and wine. Reduce by two-thirds. Strain and add the prepared No Added MSG Instant Brown Gravy Mix and lemon juice. Finish with whole butter. Garnish with poached marrow.
