Grilled Filet Mignon Steaks
Ingredients
1 Tbsp. Chopped Shallots in Oil
1 tsp. seasoning blend
2 oz. olive oil
1 Tbsp. Garlic in Oil
4 each filet mignon steaks 2-3 inches thick
1 Tbsp. Dijon mustard
Instructions
(yields 4 portions)Trim filet mignon steaks of any excess fat and sinew. In a small sauté pan add olive oil, Garlic in Oil and Chopped Shallots in Oil. Sauté until garlic just starts to turn a golden brown. Cool mixture, then add Dijon mustard and seasoning blend. Marinate filet mignon steaks in mixture for at least ½ hour before grilling. Grill the marinated filet mignon steaks - alternating the grill mark pattern to create a checkerboard pattern. Cook until desired degree of doneness.
Steak Grilling Temperature Guidelines
Rare-125°F (very red, warm center)
Medium-130°F (pink, warm center)
Well-145°F (pink, warm center)
Plating Suggestion
Place Basil & Roasted Pepper Potato Pancake on back portion of an 8 inch dinner plate. Top pancake with grilled filet mignon slightly off center leaving the top portion of the pancake exposed. Drizzle Sun-Dried Tomato & Rosemary Demi Glace around rim of plate. Garnish with a tomato crown slightly hollowed out & filled with Pesto Sauce, sprig of fresh rosemary, and a sprinkle of very small diced red bell pepper.
