Cheddar & Chile Corn Bread Crust

Ingredients

1½ cups Yellow Cornmeal
½ cup All-purpose Flour
1 Tbsp. Sugar
2 tsp. Salt
2 Tbsp. Baking Powder
2 tsp. RC Chipotle Chile Flavor Concentrate
2 Tbsp. Butter melted
1 Egg
¾ cup Milk
1-8 oz. can Cream Style Corn
1 cup Shredded Cheddar Cheese

Instructions

(yields 3 cups)

Mix all dry ingredients together in a bowl. Add beaten egg, melted butter and cream style corn. Blend together well. To make crust: Fill hot chili in dish with sides, bowl or cup. Spread a ¼ inch thick amount of the crust batter over entire top and bake in 375° oven until crust is golden brown.
