Couscous Chicken Salad

Ingredients

2 cups prepared Chicken Base of your choice
salt and pepper to taste
1 Tbsp. Chopped Shallots in Oil
½ tsp. Garlic in Oil
1 Tbsp. blended oil
2 oz. golden raisins
4 each dried apricots, julienned
1-10 oz. box couscous
16 oz. grilled boneless chicken breast, julienned

Instructions

(yields 2+ pounds)

Briefly sauté the Chopped Shallots in Oil and the Garlic in Oil in the blended oil. Add the prepared Chicken Bases and raisins. Bring the mixture to a boil. Add the couscous, stir briefly, cover and remove from the heat. Leave covered for approximately five minutes. Fluff with a fork and add the julienned apricots and chicken.
