Béchamel Sauce

Ingredients

2 medium onions, sliced
2 quarts cold milk
4 quarts cold water
1 jar Unseasoned Cream Sauce
pinch nutmeg

Instructions

(yields 6 quarts)

For ease of preparation, prepare this sauce in a double boiler. Mix the Unseasoned Cream Sauce with the cold water and milk. Add the onion and simmer for 5-10 minutes. Strain and finish with nutmeg. Cool properly and use as a base sauce for any of your white sauces.
