Carbonara Sauce
Ingredients
¼ tsp. white pepper
pinch nutmeg
3 oz. white wine
1½ oz. Chopped Shallots in Oil
3 oz. bacon diced
1 quart prepared Seasoned Cream Soup Base
1 pint prepared Instant Alfredo Sauce Mix
½ tsp. Roasted Garlic Base
½ tsp. Ham Base
4 Tbsp. parmesan cheese

Chopped Shallots in Oil. Sauté the mixture until shallots just start to brown then add white wine and reduce by half. Transfer to a double boiler then add prepared sauces,

Ham Base along with the rest of ingredients. Bring mixture to a simmer and reserve for use or refrigerate for future use.
