Ingredients

2 Tbsp. Chopped Shallots in Oil
1 bay leaf
1 tsp. whole peppercorns
1 cup Madeira
1 qt. prepared Demi Glace Sauce
1 Tbsp. whole butter

Instructions

(yields approximately 1¼ quarts)

Briefly sauté the Chopped Shallots in Oil. Add bay leaf, peppercorns, and Madeira. Reduce by two-thirds. Strain and add the prepared Demi Glace Sauce Mix. Finish with whole butter.
