Sausage Hollandaise

Ingredients

1 tsp. whole grain mustard
1½ tsp. lemon juice
¼ tsp. Worcestershire
¼ tsp. hot sauce
4 oz. sausage
2 cups prepared Hollandaise Sauce
2 tsp. chopped parsley
salt & pepper

Instructions

(yields 1 cup)

Grill or bake sausage. Remove meat from casing and discard casing. Small dice sausage meat. Add remaining ingredients and mix well. Season with salt and pepper. Hold in steam table for service.
