Shrimp Sauce

Ingredients

¾ cup Shrimp Base
¾ cup whole unsalted butter
3 quarts prepared Béchamel Sauce
1½ qts. heavy cream
white pepper

Instructions

(yields approximately 4¾ quarts)

Combine the Shrimp Base and whole butter, set aside. Combine the prepared Béchamel with heavy cream and bring to a boil. Reduce to a simmer. Slowly whisk in the shrimp butter, remove from the heat and hold for service.
