Sautéed Spring Spinach
Ingredients
1 Tbsp. olive oil
1 tsp. Garlic in Oil
1 Tbsp. Chopped Shallots in Oil
1 julienne red pepper
1 julienne yellow pepper
10 oz. washed and dried spinach
1 tsp. Liquid Vegetable Consommé Prep
Instructions
(yields 4 portions)Sauté the Garlic in Oil, Chopped Shallots in Oil and peppers until softened. Add the spinach and Liquid Vegetable Consommé Prep and toss until wilted. Serve immediately. This vegetable works well as a base for the Poached Salmon or the Seafood Couscous.
