Cream of Spinach with Garden Tomatoes
Ingredients
2 Tbsp. whole butter
½ tsp. Garlic in Oil
4 ribs celery
2 medium onions
2 lbs. spinach
3 qts. water
3½ qts. whole milk
1 jar Unseasoned Cream Sauce
ground pepper
2 ripe tomatoes
½ cup + 2 tsp. Chicken Base of your choice
Instructions
(yields approximately 32-7 oz. portions)Using the milk and water, prepare the Unseasoned Cream Sauce. Add the Chicken Bases and simmer. Wash the spinach thoroughly and chiffonade. Small dice the onion and celery. In a separate pot, lightly sauté the spinach, onion, celery, and Garlic in Oil in the whole butter. Add to the simmering soup along with the nutmeg and ground pepper. Simmer until spinach is tender. Garnish with diced tomatoes. If a smooth cream soup is desired, strain the vegetables from the soup and puree.
