Golden Leek & Mushroom Bisque
Ingredients
3 lbs. Yukon gold potatoes, peeled and diced
2 tsp. Liquid Vegetable Consommé Prep
1 tsp. Garlic in Oil
2 tsp. Mushroom Base
1 tsp. thyme
2 carrots, julienne
10 oz. mushrooms
1 bunch leeks, julienne
4 oz. pancetta
1 pint heavy cream
2½ quarts prepared Chicken Base of your choice
Instructions
(yields approximately 1 gallon)Brown the pancetta over low heat. Sauté the leeks, mushrooms, onion and carrots until tender. Add the remaining ingredients, except cream, and simmer, stirring with a whisk until potatoes break up. Finish with the heavy cream and season with additional Liquid Vegetable Consommé Prep.
