Lentil Soup
Ingredients
1 qt. prepared RC FlavorMatch Vegetarian Chicken
1 bay leaf
1 tsp. chopped fresh basil
1 tsp. chopped fresh thyme
2-4 tsp. Pesto Sauce
1½ cups diced tomatoes
1 medium onion, small diced
½ tsp. Garlic in Oil
2 Tbsp. olive oil
8 oz. lentils, soaked and drained
¼ cup tomato paste
1-2 Tbsp. Parmesan cheese
Instructions
(yields 2+ quarts)Sauté the garlic and onion in olive oil. Add the tomatoes, Pesto Sauce, herbs and prepared No Added MSG FlavorMatch® Vegetarian Chicken Flavored Base. Bring to a simmer and add lentils. Simmer until lentils soften. Add the tomato paste and pepper. Heat thoroughly. Serve as a soup sprinkled with cheese or as a sauce over pasta.
