Lentil Soup/Sauce

Ingredients

1/4 cup tomato paste
Cracked black pepper to taste
1-2 Tbsp. Parmesan cheese
1 bay leaf
1 qt. prepared RC FlavorMatch Vegetarian Chicken
2-4 tsp. Pesto Sauce
1 tsp. chopped fresh basil
1 tsp. chopped fresh thyme
1/2 tsp. Garlic in Oil
1 1/2 cups diced tomatoes
2 Tbsp. Olive Oil
1 medium onion, small diced
8 oz. lentils, soaked and drained

Sauté the garlic and onion in olive oil. Add the tomatoes, Pesto Sauce, herbs and prepared No Added MSG FlavorMatch® Vegetarian Chicken Flavored Base. Bring to a simmer and add lentils. Simmer until lentils soften. Add the tomato paste and pepper. Heat thoroughly. Serve as a soup sprinkled with cheese or as a sauce over pasta.
