Mushroom Barley Soup
Ingredients
1 Tbsp. chopped parsley
1 cup barley
1 cup prepared Mushroom Base
1 Tbsp. olive oil
1 tsp. Garlic in Oil
1 medium onion, small diced
1 carrot, small diced
1 rib celery, small diced
2 tsp. basil
½ tsp. thyme
8 oz. mushrooms, sliced
1 bay leaf
2 qts. prepared RC FlavorMatch Vegetarian Chicken
pepper to taste
Instructions
(yields 2½+ quarts)Sauté the Garlic in Oil and vegetables. Add the herbs, prepared No Added MSG FlavorMatch® Vegetarian Chicken Flavored Base and prepared Mushroom Base. Bring to a simmer and add barley. Simmer until barley is tender. Finish with chopped parsley.
