Turkey & Rice Soup
Ingredients
1 Tbsp. vegetable oil
4 oz. turkey, small diced
3 carrots, small diced
2 medium onions, small diced
2 ribs celery, small diced
1 cup corn
1 tsp. Garlic in Oil
3 quarts prepared Turkey Base
1 bay leaf
1 tsp. thyme
1 Tbsp. chopped parsley
1 tsp. rubbed sage
1 tsp. chopped fresh rosemary
1½ cups boiled rice
ground white pepper
Instructions
(yields 1+ gallons)Heat the oil and sauté the turkey, vegetables and Garlic in Oil. Add the prepared Turkey Base, herbs and cooked rice. Simmer for 3-5 minutes. Adjust the seasoning with pepper.
