Tuscan Tomato Soup

Ingredients

1 Tbsp. olive oil
1 rib celery, sliced
1 medium onion, julienne
1 zucchini, julienne
1 yellow squash, julienne
2 peeled, seeded, small diced tomatoes
½ tsp. Garlic in Oil
½ tsp. chopped fresh thyme
1 Tbsp. chopped fresh parsley
½ tsp. chopped fresh basil
1 quart prepared Liquid Vegetable Consommé Prep
1½ cups diced tomato with juice
2 Tbsp. tomato paste
1 cup cooked small pasta

Instructions

(yields 2+ quarts)

Heat oil and lightly sauté the vegetables and Garlic in Oil. Add half of the fresh herbs and toss briefly. Add the prepared Liquid Vegetable Consommé Prep, diced tomato with juice, tomato paste and cooked pasta. Simmer for 5-10 minutes and finish with remaining fresh herbs. For a different flavor profile, try substituting No Added MSG Golden Vegetable Base, No Added MSG Harvest Vegetable Base or an RC Chicken Base of your choice for the Liquid Vegetable Consommé Prep.
